SMALL DETAILS, BETTER RESULTS

Chef’s tips

  • Jaggery sweetness and moisture vary: begin with the specified quantity and adjust only after testing.
  • Strain jaggery syrup to remove any grit.
  • Do not stir repeatedly once the cooked rice is mixed with syrup.
IF SOMETHING NEEDS ADJUSTING

Common mistakes & quick fixes

Hard centre
Parboil the rice almost through before syrup cooking; sugar slows hydration.
Burnt base
Use a heavy pan and very low finishing heat; if sticking, switch off and rest.
Broken rice
Fold just enough to coat and steam without frequent stirring.

YOUR COOKING QUESTIONS

Helpful answers before you cook

Can I use a pressure cooker?

No untested universal pressure-cooker instructions are provided; this recipe is developed for the specified stovetop method.

How should I adjust the recipe for 2 or 8 servings?

Scale ingredient quantities; cooking equipment, liquid evaporation and heating/cooling times do not scale in a simple linear fashion. Use additional pan batches when needed.

How is the nutrition estimate calculated?

sum the full batch and divide by four baseline servings.

Can I prepare it in advance?

Only if rice is cooled promptly and refrigerated under authoritative rice-storage advice; reheat no more than once. For a rice dish already reheated during frying, serve immediately.
