Petha Halwa
Evaporate vegetable water before introducing the milk.
6 portions, about 650 g

Allow about 80 minutes overall. Pan width and ingredient moisture change evaporation, so the stated ranges and finishing cues govern the end of cooking. One tablespoon = 15 ml; one teaspoon = 5 ml.
About Petha Halwa
Here petha means fresh ash gourd, not the ready-made translucent candied sweet. The watery grated vegetable is first reduced on its own, then cooked with milk and sugar. This approach prevents the gourd from floating in a thin syrup. The finished dessert has soft translucent shreds and a light milk coating rather than a dense fudge set.
Kitchen testing has not been documented for this recipe. Cooking times are estimates and vary with the stove, cookware and batch size. Follow the doneness checks in the method.
Make it work for your kitchen
Original quantities serve 6. Cooking times, pan size and frying-oil depth do not scale, cook in extra batches instead.
Before you start
Prepare the base
Weigh only clean ash gourd flesh. Commercial candied petha cannot replace the fresh vegetable at this ratio.
Before heatingSet up the equipment
Have the following tools ready before starting: Digital scale; Heavy 24 cm wide saucepan or sauté pan; Heat-resistant flat spatula; Measuring jug; Small shallow serving or setting dish.
Clean workspaceMeasure the ingredients
Measure the ingredient quantities for your selected servings before applying heat. Keep separately listed groups, such as dough, filling, sauce or garnish, in separate containers; keep any optional additions separate.
Use the ingredient list aboveCheck allergens and substitutions
Check ingredient labels and any substitutions against these notes: Milk from milk and ghee; cashews. Check ingredient labels for cross-contact.
Before cooking
Step-by-step cooking method
1 Grate and reduce
Grate ash gourd coarsely.
2 Grate and reduce (continued)
Place in a wide pan without extra water and cook 12–18 minutes, stirring, until the released liquid is nearly gone.
3 Grate and reduce (continued)
Do not let the drying shreds scorch.
4 Cook with milk
Add milk and simmer 15–20 minutes until shreds are tender and milk thickens around them. Stir along the corners as the pan dries.
5 Add sweetness
Stir in sugar and 40 g ghee.
6 Add sweetness (continued)
Cook 10–15 minutes until the thin syrup released by sugar is absorbed or evaporated. Fold rather than mash to preserve the shreds.
7 Toast the garnish
In a small pan warm remaining 15 g ghee and toast cashews 2–3 minutes until golden.
8 Toast the garnish (continued)
Fold into halwa with cardamom; rest 10 minutes.
Chef’s tips
- Evaporate vegetable water before introducing the milk.
- Weigh only clean ash gourd flesh. Commercial candied petha cannot replace the fresh vegetable at this ratio.
Common mistakes & quick fixes
- Watery finish
- Use a wider pan and reduce before sweetening; do not thicken with unlisted starch.
- Scorched bottom
- Move the unburnt upper mixture to a clean heavy pan without scraping the stuck layer.
Variations & serving ideas
Nut-free serving: Where nuts are a garnish, omit them and use clean utensils to avoid cross-contact. Where ground nuts form the body, omission requires a different recipe rather than a direct swap.
Perfect result check
| Texture | Soft pale shreds that hold a spoonable mound without weeping. |
|---|---|
| Moisture | No free liquid runs into the space left by the spatula. |
Storage & reheating
| Covered in shallow portions in the refrigerator | Use within 48 hours | Cool promptly rather than leaving a deep hot pan on the counter. Store at 4°C or colder; serve a clean portion and keep the remainder chilled. Freeze only if the texture change is acceptable. |

Know when to change the heat
| Stage | Heat | What to look for |
|---|---|---|
| Grate and reduce | Medium heat | 12–18 minutes |
| Cook with milk | Medium-low heat | 15–20 minutes |
| Add sweetness | Low heat | 10–15 minutes |
| Toast the garnish | Low heat | 3 minutes |
Helpful answers before you cook
Can I prepare it ahead?
Yes, cool promptly in shallow portions and refrigerate; warm only what you need or serve cool if preferred.
What determines the cooking time?
The moisture of the main ingredient and pan width matter more than a rigid timer. Use the described moisture and texture endpoint.
Can I replace the main ingredient?
Not directly. Vegetable water content and nut fat differ greatly; choose the separately formulated recipe for that ingredient.
