About Double Ka Meetha
This Double Ka Meetha is a layered bread sweet in a shallow casserole, with ghee-toasted bread, syrup, lightly reduced milk and cream. It is deliberately softer and more integrated than the separate single-layer shahi tukray recipe. The bread is cut into chunky pieces so the interior absorbs milk without turning immediately into paste. The final covered rest is gentle and short; no egg custard is used.
Kitchen testing has not been documented for this recipe. Cooking times are estimates and vary with the stove, cookware and batch size. Follow the doneness checks in the method.

Original quantities serve 8. Cooking times, pan size and frying-oil depth do not scale, cook in extra batches instead.
Before you start
Prepare ingredients
Use a heavy shallow casserole; very deep layering gives a wet bottom and dry top. Keep the cream pasteurized.
SetupSet up the equipment
Have the following tools ready before starting: Digital scale; Heavy 24 cm wide saucepan or sauté pan; Heat-resistant flat spatula; Measuring jug; Small shallow serving or setting dish.
Clean workspaceMeasure the ingredients
Measure the ingredient quantities for your selected servings before applying heat. Keep separately listed groups, such as dough, filling, sauce or garnish, in separate containers; keep any optional additions separate.
Use the ingredient list aboveCheck allergens and substitutions
Check ingredient labels and any substitutions against these notes: Milk; Wheat/gluten; check bread for milk, egg or soy; Cashews. Check packaged ingredient cross-contact.
Before cooking
Step-by-step cooking method
1 Reduce milk
Simmer milk with saffron and cardamom for 15–20 minutes until about 450 ml remains. Stir the base frequently. Remove from heat and mix in cream.
2 Toast bread and nuts
Cut bread into 4 cm chunks.
3 Toast bread and nuts (continued)
Reserve 15 g ghee and toss the bread with remaining 65 g in a wide pan, toasting in batches until all cut faces are golden.
4 Toast bread and nuts (continued)
In reserved ghee toast cashews 2 minutes, then raisins 30 seconds until plump.
5 Make syrup
Dissolve sugar in water and simmer 4 minutes until clear and lightly sticky. Do not reduce to a firm thread.
6 Layer
Put half the bread in a shallow heavy casserole.
7 Layer (continued)
Spoon half the syrup and half the milk over it, scatter half the nuts and raisins, then repeat. Pour liquid evenly rather than flooding one corner.
8 Settle
Cover and warm on the lowest heat for 5–7 minutes until steaming through; do not stir into a mash. Rest covered off heat for 15 minutes. Serve warm in spooned portions.
Chef’s tips
- Keep bread chunks large and fold nothing after layering.
- Raisins need only seconds in ghee; dark burnt raisins give bitter pockets.
Common mistakes & quick fixes
- Mushy paste
- Bread was too fresh, insufficiently toasted or stirred after soaking. Use firm toasted chunks and spoon portions gently.
- Dry top
- Distribute milk evenly over both layers before the covered rest.
- Scorched casserole
- Use a heavy base and the lowest heat; the final stage is warming, not reducing all the liquid away.
Variations & serving ideas
Defined style: This layered version differs from crisp individually dipped shahi tukray.
Perfect result check
| Texture | Soft milk-soaked bread holds chunky outlines, with a little syrupy sauce between layers. |
|---|---|
| Serving | Eight spooned portions include both layers and some nuts. |
Storage & reheating
| Covered in shallow portions in the refrigerator | Use within 48 hours | Cool promptly rather than leaving a deep hot pan on the counter. Store at 4°C or colder; serve a clean portion and keep the remainder chilled. Freeze only if the texture change is acceptable. |

Helpful answers before you cook
Can I bake it?
A covered warm oven can replace the final gentle warming, but monitor moisture; this recipe is written for a heavy stovetop casserole.
Why no egg?
Bread absorbs milk and syrup without an egg custard in this chosen style.
Can I serve it cold?
Yes, cool promptly in shallow portions and refrigerate; the bread will be softer and more set.
