Chicken Bun Kebab
Dry-simmered meat-and-lentil patties in toasted buns
Four fully assembled street-style bun kebabs

Includes 45–60 minutes refrigerated dal soaking and 20 minutes cooling the patty mixture. Some sauce and bun preparation overlaps cooling; allow longer if the lentils need extra simmering. One tablespoon = 15 ml; one teaspoon = 5 ml.
About Chicken Bun Kebab
This chicken bun kebab makes its own chicken and chana-dal patties, then adds a cool sauce and fresh onion to a toasted bun. A dry, finely worked patty mixture is essential for a sandwich that holds together.
Bun kebab can describe several different patty styles. This formulation states its contents clearly rather than relying on the name alone. Cook the lentil base until it crushes easily and evaporate residual water before grinding; a wet mixture cannot be rescued simply by frying longer. Assemble only after all hot components are ready so the soft bun does not sit under sauce.
Kitchen testing has not been documented for this recipe. Cooking times are estimates and vary with the stove, cookware and batch size. Follow the doneness checks in the method.
Make it work for your kitchen
Original quantities serve 4. Cooking times, pan size and frying-oil depth do not scale, cook in extra batches instead.
Before you start
Set up the ingredients
Weigh each component before starting. Keep raw ingredients, cooked components and serving garnishes in separate bowls so the order in the steps is easy to follow. Wash produce under running water before cutting and use clean utensils for the finished dish.
PreparationPlan the finishing stage
Prepare a clean serving area before the final cooking or assembly. Finish only the amount you intend to eat immediately; moist garnishes and crisp components are best combined at the last moment. Keep chilled ingredients refrigerated until needed.
WorkflowSet up the equipment
Have the following tools ready before starting: Scales; Saucepan; Colander; Food processor; Wide frying pan; Broad spatula; Food thermometer.
Clean workspaceMeasure the ingredients
Measure the ingredient quantities for your selected servings before applying heat. Keep separately listed groups, such as dough, filling, sauce or garnish, in separate containers; keep any optional additions separate.

Step-by-step cooking method
1 Soak and simmer
Rinse dal, cover with its soaking water and refrigerate 45–60 minutes. Drain.
2 Soak and simmer (continued)
Put dal, minced meat, cooking onion, ginger, garlic, cumin, coriander seed, chilli, salt and initial cooking water into a saucepan.
3 Soak and simmer (continued)
Bring to a simmer, cover partly and cook 30–40 minutes until dal crushes smoothly. Add reserve water in 30 ml increments only if catching before tender.
4 Dry and grind
Remove lid and stir over medium heat until no free water remains and the mixture leaves a clear trail in the pan. Check the meat is fully cooked; chicken and this conservative minced-meat formulation should reach 75°C for 30 seconds. Spread shallowly to cool promptly.
5 Dry and grind (continued)
Pulse to a fine textured paste, scraping the machine rather than adding water. Fold in fresh coriander and the beaten binding egg. Divide into four patties about 9 cm wide and 1.5 cm thick.
6 Fry the patties
Heat 25 ml of the oil in a wide nonstick or well-seasoned pan over medium heat. Cook patties 3–4 minutes on each side without moving until the first crust sets.
7 Fry the patties (continued)
Because egg was added after cooking, the patties must be fully cooked again; verify 75°C for 30 seconds in the centre. Handle with a broad spatula.
8 Toast and build
Stir yogurt, green chutney and lemon into a smooth sauce; keep chilled until needed. Split buns and toast cut sides with the remaining oil until lightly golden. Spread sauce on the bases, add a hot patty and onion slices, then close. Serve immediately; keep remaining sauce cold.
Chef’s tips
- Measure the salt separately from any packaged seasoning; branded spice blends can already be salty.
- Keep cut sizes consistent so the components cook or soften at the same rate.
- Use a clean serving spoon rather than returning a tasting spoon to a component that will be stored.
Common mistakes & quick fixes
- The final mixture tastes flat.
- Taste a small complete serving, including every sauce or garnish. Adjust the measured salt or acid in a small portion first, then apply that correction to the remaining batch.
- The texture deteriorates before serving.
- Keep crisp and moist components separate until the final step, and prepare smaller serving batches. A long assembled hold cannot be corrected by adding more spice.
Variations & serving ideas
Milder serving: Use half the stated chilli in the base batch, keeping the other ingredient weights unchanged. Offer additional chilli separately at the table; heat-sensitive diners can then take an unmodified portion of the fully cooked dish.
Perfect result check
| Main component | The centre is cooked or softened as specified, with no raw patches. |
|---|---|
| Finished serving | The individual components remain identifiable, evenly seasoned and easy to portion. |
Storage & reheating
| Refrigerate patties separately | Up to 48 hours | Cool promptly in shallow portions and refrigerate within two hours. Reheat once until thoroughly hot. Store sauce cold and buns dry; do not store assembled sandwiches. |
|---|---|---|
| Freeze cooked patties | Up to 1 month for quality | Freeze cooled patties separated by baking paper. Defrost in the refrigerator before reheating thoroughly once. |
Know when to change the heat
| Stage | Heat | What to look for |
|---|---|---|
| Preparation | As specified in each step | Do not use browning alone as a substitute for checking the middle of a thick item. |
| Finish | Prompt service | Complete the final assembly immediately before eating. |
Helpful answers before you cook
Why does the patty break?
The base was too wet or not worked finely enough. Evaporate cooking liquid before grinding and let the first side crust before turning. Do not add raw flour as an unmeasured patch.
Can I use ready-made shami kebabs?
Yes, but that becomes an assembly shortcut. Follow their cooking instructions and allergen label; the timing here includes making the stated patties from scratch.
Can I pack this for later?
Pack hot components only after safe cooling and keep them refrigerated. Assemble close to eating; a sauced warm sandwich held for hours becomes soggy and is not the intended storage method.
