About Thai Red Curry
This Thai red curry pairs chicken with pumpkin and red pepper, giving it a different sweetness and cooking sequence from the green curry entry. Prepared red paste is bloomed first, and pumpkin is simmered until just tender before pepper is added. The coconut sauce stays fluid enough to spoon over a separately prepared side. The colour depends on the paste, not added red dye or tomato sauce. Salt comes from the paste, stock and fish sauce.
Kitchen testing has not been documented for this recipe. Cooking times are estimates and vary with the stove, cookware and batch size. Follow the doneness checks in the method.

Chef’s tips
- Let pumpkin start softening before adding chicken and leave pepper until late.
- Use the measured base batch first; curry pastes and fish sauces differ in salt, heat and concentration.
Common mistakes & quick fixes
- Pumpkin dissolves
- Cubes were too small or cooked too long; use firm pumpkin and the stated size.
- Chicken toughens
- Do not keep boiling after it reaches 74°C.
- Curry is excessively thick
- It has reduced too much. Use a lidded gentle simmer earlier rather than an uncovered rolling boil.
