    Check tenderness

Push a fork into a thick area away from bone. Continue covered cooking until it pulls apart readily; goat may need additional time.

Tips & fixes

  • Tough meat: more covered time is needed, not a hotter oven.
  • Over-salty juices: dilute with a little hot water before serving.
  • Dry edges: keep covered for most of the roast and brown only at the end.

Heat guide

Use the oven temperatures in the cooking steps. Keep the dish covered during slow roasting, then uncover briefly to brown. Oven performance and meat tenderness change cooking time.

Storage

Cool leftovers promptly in shallow containers, refrigerate and use within 48 hours or freeze. Reheat only the portion needed until steaming hot throughout. Follow ingredient use-by dates if sooner.

Variations

  • Goat shoulder gives a different flavour and may take longer.
  • For a pepper-free version, season only with salt and offer pepper at the table.

Nutrition

Approximate values per serving, excluding optional accompaniments. Ingredient brands, edible meat yield, absorbed fat and portion sizes change the result.
