Dynamite Prawns
Crisp prawns in creamy chilli dressing
Four starter portions

Preparation and cooking estimates assume ingredients are thawed. Cook times vary with pan recovery, thickness and burner strength. Set aside the full stated total; use the stated sensory checks and safe temperatures rather than extending cooking blindly. One tablespoon = 15 ml; one teaspoon = 5 ml.
About Dynamite Prawns
Dynamite is used here for a modern restaurant-style mayonnaise and chilli-sauce coating, not a named traditional Chinese preparation.
This is an original home-kitchen formulation with a defined batch size. Prepare the measured components before starting; a domestic burner loses heat if overloaded. The texture described below is the target, while a thermometer, rather than colour alone, establishes meat doneness. This editorial draft has not been kitchen tested.
Kitchen testing has not been documented for this recipe. Cooking times are estimates and vary with the stove, cookware and batch size. Follow the doneness checks in the method.
Make it work for your kitchen
Original quantities serve 4. Cooking times, pan size and frying-oil depth do not scale, cook in extra batches instead.
Before you start
Set up safely
Measure every component. Keep raw animal ingredients and their utensils away from ready-to-eat garnishes; wash hands and equipment after contact. Thaw and marinate in the refrigerator.

Batch planningSet up the equipment
Have the following tools ready before starting: 22 cm deep heavy frying pot; Oil thermometer; Wire draining rack; 24 cm sauce pan; Food thermometer.

Measure the ingredient quantities for your selected servings before applying heat. Keep separately listed groups, such as dough, filling, sauce or garnish, in separate containers; keep any optional additions separate.

Step-by-step cooking method
1 Mix a cold coating sauce
Stir mayonnaise, sweet chilli sauce, hot chilli sauce and lemon juice in a clean serving bowl; refrigerate.
2 Mix a cold coating sauce (continued)
Pat the protein very dry. Toss with salt, pepper and beaten egg, then coat in combined cornflour and flour, pressing lightly so no wet bare patches remain.
3 Fry in small batches
Heat oil to 175°C in a stable 22 cm deep pot filled below halfway. Lower in one third of the pieces, separating with tongs.
4 Fry in small batches (continued)
Fry 2–3 minutes until prawns reach 63°C and become opaque; avoid a tight rubbery curl.
5 Fry in small batches (continued)
Drain on a wire rack. Return oil to temperature between rounds and skim stray coating with a metal sieve.
6 Dress only at the table
Let the fried pieces stop steaming heavily for about 1 minute, then fold into the cold sauce using a broad spoon.
7 Dress only at the table (continued)
The sauce should cling in a thin layer rather than burying them.
8 Dress only at the table (continued)
Sprinkle spring onion and serve immediately. Do not simmer mayonnaise or hold sauced pieces in a covered hot pan.
Chef’s tips
- Prepare the serving plates before the final cooking stage so the finished texture is not lost while waiting.
- Use a sufficiently wide pan. If ingredients overlap heavily, divide them and allow the pan to regain heat between rounds.
- Taste the cooked sauce before serving; brand salt levels differ. Do not taste a marinade that has touched raw meat.
Common mistakes & quick fixes
- Pan liquid accumulates instead of reducing
- Pause additions and let moisture evaporate uncovered. If protein is already safely cooked, remove it while reducing the liquid so it does not toughen.
- Exterior browns before the centre is ready
- Lower the heat and continue more gently, checking the thickest piece with a thermometer. Make the next batch more even in thickness.
Variations & serving ideas
Heat adjustment: Reduce only the listed chilli component for a milder batch; keep the protein, liquid and starch quantities unchanged.
Perfect result check
| Defining texture | Crisp prawns in creamy chilli dressing. Follow the size and consistency cues in the steps. |
|---|---|
| Relevant doneness | Prawns reach 63°C and are opaque; stop promptly to avoid a tough texture. |
Storage & reheating
| Refrigerator | Use within 48 hours | Cool fried pieces in a shallow layer and refrigerate at 4°C or colder within 2 hours, or 1 hour above 32°C. Store sauces separately rather than soaking the crust. This is a conservative editorial limit. |
|---|---|---|
| Reheating | Reheat once | Reheat chicken to 74°C, or fish/prawn leftovers to 74°C, on a rack in a 180°C oven. Keep creamy dip or glaze separate where possible. Fried crust will be softer than freshly cooked. |
Know when to change the heat
| Stage | Heat | What to look for |
|---|---|---|
| Mix a cold coating sauce | No heat | 15 minutes; use the detailed doneness cues in this step. |
| Fry in small batches | 175°C oil | 10–18 minutes; use the detailed doneness cues in this step. |
| Dress only at the table | No heat | 2 minutes; use the detailed doneness cues in this step. |
Helpful answers before you cook
Can I heat the dynamite dressing?
Mix mayonnaise, chilli sauces and lemon cold. Do not simmer it: this version is a creamy cold dressing folded around hot crisp pieces just before serving.
Why is the dressing sliding off?
Drain the fried prawns on a rack and let heavy steam subside for about 1 minute. Excess frying oil and watery surfaces prevent the dressing clinging.
What is the safe frying endpoint?
The largest prawns must reach 63°C and become opaque. Their short 2–3 minute fry is much quicker than chicken.
