Caramel Pudding
Egg-free caramel milk pudding cups
Six 150 ml cups with roughly 120 ml pudding each

Base elapsed estimate: 235 minutes, including the proofing, cooling or chilling explicitly stated in the method. Preparation and baking may overlap only where directed. A cold refrigerator is 4°C or below; a warm kitchen can require earlier refrigeration and longer chilling. One tablespoon = 15 ml; one teaspoon = 5 ml.
About Caramel Pudding
Caramel pudding is defined here as an egg-free, cornflour-thickened milk dessert served in cups, distinct from the baked egg-custard Crème Caramel entry.
Use a deep caramel pan and add warm milk slowly off heat; the pudding is spoon-set, not an unmoulded flan. This is an original editorial formulation. Pan dimensions, measured egg weight and the cooling or chilling stage are part of the recipe, not optional details. It has not been kitchen tested; oven performance and ingredient brands can change the final timing.
Kitchen testing has not been documented for this recipe. Cooking times are estimates and vary with the stove, cookware and batch size. Follow the doneness checks in the method.
Make it work for your kitchen
Original quantities serve 6. Cooking times, pan size and frying-oil depth do not scale, cook in extra batches instead.
Before you start
Prepare the actual equipment
Mix cornflour with 100 ml cold milk until smooth. Weigh all ingredients before starting; keep dairy components chilled until the method calls for them.
Mise en placeClean handling
Do not taste raw flour, dough or egg batter. Use pasteurized dairy and clean utensils for uncooked cream fillings. Keep eggs and dairy refrigerated until needed.
Food safetySet up the equipment
Have the following tools ready before starting: Digital scales; Deep 3 litre caramel saucepan; Separate milk-warming pan; Whisk; Six 150 ml heatproof cups; Oven gloves; Spatula.
Clean workspaceMeasure the ingredients
Measure the ingredient quantities for your selected servings before applying heat. Keep separately listed groups, such as dough, filling, sauce or garnish, in separate containers; keep any optional additions separate.

Step-by-step cooking method
1 Prepare slurry and warm milk
Mix cornflour with 100 ml cold milk until smooth. Warm the remaining 500 ml milk until steaming in a separate pan.
2 Prepare slurry and warm milk (continued)
Set out six 150 ml heatproof cups. Use a deep 3 litre pan for caramel because hot dairy will foam when added.
3 Colour the sugar carefully
Put sugar and caramel water in the deep pan. Heat gently to dissolve, then boil without stirring until medium amber, swirling carefully if needed.
4 Colour the sugar carefully (continued)
Remove from heat. Wearing oven gloves and keeping your face back, slowly add warm milk in several additions; it will bubble and steam vigorously. Never touch or taste hot caramel.
5 Thicken fully
Return to low heat and stir until any hardened caramel dissolves. Stir the cold slurry again, whisk into caramel milk and bring to a gentle bubble.
6 Thicken fully (continued)
Cook 2 minutes, stirring corners, until smooth and spoon-coating. Add salt and vanilla. This pudding is starch-set rather than egg-set.
7 Portion and chill
Divide between cups, cover surfaces directly if avoiding a skin and cool briefly before refrigerating promptly.
8 Portion and chill (continued)
Chill at least 3 hours. Serve from cups; this formulation is not a firm unmoulded crème caramel and is not intended to hold an inverted shape.
Chef’s tips
- Use a deep caramel pan and add warm milk slowly off heat; the pudding is spoon-set, not an unmoulded flan.
- Keep the measured liquid quantities and ingredient temperatures as stated; added liquid changes setting, frying or batter behaviour.
- Prepare serving dishes before the final stage and use the actual texture cues in the method, rather than waiting for an oven colour change.
Common mistakes & quick fixes
- Caramel seizes into lumps
- Add warm milk gradually off heat, then return to low heat and stir until hard caramel dissolves.
- Pudding is gritty or starchy
- Mix cornflour with cold milk until smooth and cook the finished pudding at a gentle bubble for two minutes.
- Pudding will not unmould
- Serve from cups; this egg-free formulation is deliberately spoon-set, not a firm flan.
Variations & serving ideas
Serving size: Divide the same completed batch into smaller portions if desired. Do not increase batter depth or shorten a chilling stage merely because the portions are smaller.
Perfect result check
| Texture | Use a deep caramel pan and add warm milk slowly off heat; the pudding is spoon-set, not an unmoulded flan. |
|---|---|
| Cooked centre | Cook flour-and-egg batter fully as specified; for custard, reach at least 71°C and finish the stated starch cook. Do not taste raw batter. |
Storage & reheating
| Refrigerator | Use within 48 hours | For cream, custard, cheesecake or fruit-filled desserts, cover and refrigerate at 4°C or colder promptly, within 2 hours or 1 hour above 32°C. Use shallow portions for cooling. This is a conservative editorial limit. |
|---|---|---|
| Serving | Keep chilled desserts cold until serving | Return unused portions promptly to the refrigerator. Plain baked goods without perishable toppings may be covered at cool room temperature for 24 hours; refrigerate in a hot kitchen. Texture is best on the day specified by the method. |
Know when to change the heat
| Stage | Heat | What to look for |
|---|---|---|
| Prepare slurry and warm milk | Low milk heat | Cold slurry is smooth and separate milk steams. |
| Colour the sugar carefully | Medium caramel heat then off heat | Sugar is medium amber; warm milk is added slowly off heat. |
| Thicken fully | Low-medium heat | Caramel dissolves and pudding bubbles gently to a smooth spoon-coating texture. |
| Portion and chill | Refrigerator | Cold pudding is spoon-set in cups, not firm enough to unmould. |
Helpful answers before you cook
Is this an unmoulded caramel flan?
No. It is an egg-free cornflour-thickened milk pudding served in cups. It is not formulated to hold an inverted shape.
Why add warm milk off heat?
Caramel is much hotter than milk and foams violently on contact. Remove the deep pan from heat and add warm milk gradually with hands and face clear of steam.
Why does caramel turn into hard lumps?
It can harden briefly when milk is added. Return to low heat and stir until dissolved before adding the starch slurry.
