SMALL DETAILS, BETTER RESULTS

Chef’s tips

  • Do not cook the beaten eggs over high heat: they tighten and become crumbly.
  • Dry out the tomato mixture first rather than cooking the egg for longer to evaporate water.
  • If using a small pan, cook in two batches and allow more elapsed time.

YOUR COOKING QUESTIONS

Helpful answers before you cook

Is Anda Bhurji the same as Anda Ghotala?

This recipe scrambles raw eggs directly into a reduced masala; our Anda Ghotala record also includes chopped boiled eggs.

Can I use leftover scrambled eggs?

Freshly scrambling the eggs in the masala gives a better result. If using leftovers, reheat safely to 74°C and expect drier texture.

How is this different from khageena?

Khageena is an overlapping regional name; some versions include potato. Avoid treating every khageena as an identical preparation.
