Step-by-step cooking method
1 Soften base
Simmer onion, cashews, ginger and garlic in 300 ml water 15–20 minutes until onion is fully soft and cashews tender.
2 Soften base (continued)
Cool slightly, then blend smooth, retaining the liquid. Avoid sealing steaming liquid in a full blender.
3 Cook paste
Warm ghee and whole spices in a heavy pan.
4 Cook paste (continued)
Add the blended paste, coriander and white pepper. Cook low 6–8 minutes, stirring constantly so the pale sauce does not catch or brown.
5 Add yogurt
Lower heat further and stir yogurt in gradually.
6 Add yogurt (continued)
Keep stirring until it is incorporated and steaming, then cook 4–5 minutes. Add allowance in small amounts if paste is too stiff.
7 Warm paneer
Add paneer, salt, sugar and cream. Simmer very gently 5–7 minutes until paneer is hot through. The sauce should pour slowly and remain pale; do not boil down into a paste.
8 Finish aroma
Turn heat off, add rose water and rest 3 minutes. Remove visible whole spices before serving. Rose water should be a faint accent, not a perfume-like dominant flavour.
Chef’s tips
- Keep onion pale during the initial simmer. Browning it would change the intended white-gravy style.
Common mistakes & quick fixes
- Is shahi paneer always white?
- No. This draft explicitly chooses a pale cashew-yogurt-cream version; tomato-based household and restaurant versions also exist.
- Why is the gravy grainy?
- Cashews may be under-softened or insufficiently blended. Simmer until tender and blend smoothly before the paneer stage.
