Double Zinger Burger
Double spicy flour-crusted chicken burger
Four double chicken burgers

Allow about 85 minutes for this base batch. Ingredient thickness, burner strength and oven recovery affect the range. The method identifies work that may overlap; use safe doneness and texture cues rather than extending or shortening cooking solely to match the clock. One tablespoon = 15 ml; one teaspoon = 5 ml.
About Double Zinger Burger
A home Zinger-style interpretation, not a branded copycat claim. The double uses two smaller thin pieces per bun.
This original formulation defines the style and portion size rather than assuming the catalogue title has only one interpretation. Follow the order of work so components are ready together. The stated times are estimates for a domestic kitchen, not evidence of a kitchen test.
Kitchen testing has not been documented for this recipe. Cooking times are estimates and vary with the stove, cookware and batch size. Follow the doneness checks in the method.
Make it work for your kitchen
Original quantities serve 4. Cooking times, pan size and frying-oil depth do not scale, cook in extra batches instead.

Recipe scopeMeasure and separate
Cut ingredients to the sizes listed and measure liquids before heating. Keep ready-to-eat garnishes on a clean board separate from raw meat. Make any cold dressing in a clean bowl and refrigerate it until assembly.
PreparationSet up the equipment
Have the following tools ready before starting: 24 cm deep heavy pot; Oil thermometer; Food thermometer; Wire draining rack; Breading bowls; Dry toasting skillet.
Clean workspaceMeasure the ingredients
Measure the ingredient quantities for your selected servings before applying heat. Keep separately listed groups, such as dough, filling, sauce or garnish, in separate containers; keep any optional additions separate.

Step-by-step cooking method
1 Marinate evenly sized chicken
Reserve 25 ml of the measured buttermilk in a clean cup before raw meat contact. Mix the remaining 155 ml with half the salt, paprika, cayenne, garlic powder and pepper.
2 Marinate evenly sized chicken (continued)
Coat chicken and refrigerate 30 minutes. Mix mayonnaise with chilli sauce separately and refrigerate.
3 Build the coating
Mix flour, cornflour and remaining salt. Drizzle the reserved 25 ml clean buttermilk into it and rub to make small flakes.
4 Build the coating (continued)
Lift chicken from marinade, press into the flour mixture and rest on a tray 5 minutes. Discard all used marinade and raw-contact breading.
5 Fry at controlled depth
Heat oil to 175°C in a 24 cm deep pot below half full. Fry two pieces at a time without overlap for 4–6 minutes, turning once, until the thickest part reaches 74°C.
6 Fry at controlled depth (continued)
Maintain 165–180°C; allow temperature recovery between rounds. Drain on a rack, not in a pile.
7 Toast and assemble
Toast split bun faces in a dry pan for 1–2 minutes.
8 Toast and assemble (continued)
Spread measured chilli mayonnaise on the faces, add lettuce, two chicken pieces and pickles. Serve immediately so the sauce does not soak the crust.
Chef’s tips
- Prepare serving plates before the finishing stage so the intended texture is not lost while waiting.
- Do not crowd the stated pan: larger batches need separate cooking rounds and time for heat to recover.
- Taste the fully cooked component before assembly. Commercial cheeses, bread and sauces vary in salt; never taste raw meat mixture or raw marinade.
Common mistakes & quick fixes
- The outside colours before the centre is ready
- Lower heat and finish gently, checking the centre with a thermometer where relevant. Make the next batch uniform in thickness.
- The finished texture becomes damp
- Drain wet ingredients thoroughly and serve promptly. Trapped steam and heavy sauce soften a crisp surface.
Variations & serving ideas
Portion planning: Divide the complete batch into the stated portions first. For a larger group, multiply measured ingredients but cook in separate batches; heat, oil depth and cooking time do not scale directly.
Perfect result check
| Defining texture | Double spicy flour-crusted chicken burger. Follow the size and consistency cues in the steps. |
|---|---|
| Relevant doneness | Chicken reaches 74°C in the thickest meat or filling; check away from bone where present. |
Storage & reheating
| Refrigerator | Use within 48 hours | Cool fried pieces in a shallow layer and refrigerate at 4°C or colder within 2 hours, or 1 hour above 32°C. Store sauces separately rather than soaking the crust. This is a conservative editorial limit. |
|---|---|---|
| Reheating | Reheat once | Reheat chicken to 74°C, or fish/prawn leftovers to 74°C, on a rack in a 180°C oven. Keep creamy dip or glaze separate where possible. Fried crust will be softer than freshly cooked. |
Know when to change the heat
| Stage | Heat | What to look for |
|---|---|---|
| Marinate evenly sized chicken | No heat | 15 minutes plus 30 minute marination; use the detailed doneness cues in this step. |
| Build the coating | No heat | 10 minutes; use the detailed doneness cues in this step. |
| Fry at controlled depth | 170–175°C oil | 18–28 minutes; use the detailed doneness cues in this step. |
| Toast and assemble | Medium toast; off heat assembly | 3 minutes; use the detailed doneness cues in this step. |
Helpful answers before you cook
How thick should the chicken be?
Use eight 80 g pieces for the double, flattened evenly; two thin pieces cook more predictably than two full-thickness breast portions.
What makes this coating different?
Reserve 25 ml clean buttermilk before marinating, drizzle it into flour and cornflour and rub small flakes. These create the irregular craggy crust without reusing raw-contact liquid.
When do sauce and lettuce enter?
Toast buns first, then add the cold chilli mayonnaise and very dry lettuce just before the drained chicken. Assemble at serving time; mayonnaise and lettuce soften a held crust.
